As spring warms into summer, picnic season is starting to heat up. This recipe makes a great accompaniment to anything from burgers and dogs on a campfire to steak or chicken on a gas grill. The recipe can easily be doubled to serve a crowd.
Macaroni Salad
1/2 lb.macaroni, cooked (about 2 1/3 c. before cooking) 3 hard-boiled eggs, separated 1/2 cup chopped celery 1/4 cup grated carrot 1 small onion, chopped 1/4 cup diced green pepper (optional) 1 cup salad dressing or mayonnaise 3/4 cup sugar 1/6 cup vinegar (2 Tbsp. + 2 tsp.) 1 1/2 Tbsp. mustard
Mix together macaroni, celery, carrot, onion, green pepper and egg whites (chopped). Mix together salad dressing, sugar and vinegar and pour over macaroni mixture. Mash egg yolks with mustard. Add to mixture and stir until well blended. Chill before serving, if desired.
