When the kids are begging for a snack and you want to feed them something nutritious, but they turn up their noses at fruits and vegetables, here’s a refreshing alternative. And it’s as sugar-free as you want it to be. (When I make either recipe, there’s no added sugar or sweetener. I use Benjamin’s favorite Juicy Juice, and it tastes great even without added sugar.)
Fruit Juice Gelatin Blocks I
4 envelopes unflavored gelatin
1cup cold fruit juice
3 cups fruit juice, heated to boiling
2 Tbsp. sugar or honey, optional
Sprinkle gelatin over cold juice in large bowl; let stand 1 minute. Add hot juice and stir until gelatin completely dissolves, about 5 minutes. Stir in sugar or honey if desired. Pour into 13x9x2-inch pan.
Refrigerate until firm, about 3 hours. To serve, cut into 1-inch squares. Makes about 9 dozen.
Fruit Juice Gelatin Blocks II
3 envelopes unflavored gelatin
12 oz. can frozen juice concentrate
12 oz. water
Soften the gelatin in the thawed juice and bring the water to a boil. Add the juice-and-gelatin mixture to the boiling water and stir until gelatin dissolves. If the juice needs extra sweetening, add it here.
Pour into a pan (you may want to lightly grease the pan) and refrigerate until firm, about 2 hours. Cut into squares, or use a cookie cutter. Store in an airtight container in the refrigerator.
This can also be made with shelf-stable juice concentrate.
