Our second family reunion of the summer is coming up on Saturday. That means, no matter how scorching hot this week is, I’ll have to bake some pies. I have made these particular Pennsylvania Dutch specialties so often for the family reunions that it seems everyone looks for them.
In fact, both reunions use a secret pound auction to raise funds for the various activities. For the last couple years, I’ve included pies in the auction. Of course, the content of the package isn’t much of a secret, since I have to label it “this side up” and “do not crush,” and the bidding tends to be hot and heavy for the coveted pies.
Chocolate Funny Cake Pie
Top part:
2 cups sugar
¼ cup butter or margarine, softened
¼ cup shortening
1 cup milk
2 beaten eggs
2 cups flour
2 tsp. baking powder
1 tsp. vanilla
Cream together sugar, butter and shortening. Add the combined milk and egg alternately with flour and baking powder. Add vanilla and set aside until lower part is mixed.
Lower part:
2 cups sugar
1 cup cocoa
2 ¼ cups water
1 tsp. vanilla
Mix together the cocoa, sugar, water and vanilla. Pour into unbaked pie shells. Over this put the top part. Bake in a 350 degree oven for 35 minutes or until firm.
Makes 4 8-inch pies.
